1 whole egg
and 2 egg whites, beaten

cup spinach
1 slice
Ezekiel bread or whole wheat bread
1 slice
soy cheese
Scramble eggs
in frying pan with spinach. Toast bread and place scramble eggs
and spinach on top of toast. Melt cheese on top.

In a small bowl,
combine the eggs, oats, and cottage cheese. Set aside for 10-15
minutes to let the oatmeal soften. Heat a non-stick griddle over
medium heat. Divide the batter in half to make two pancakes, pour
onto the griddle. After 3 minutes, turn over pancake to cook the
other side. Serve with bananas, syrup, and flax oil.
